  • Chef AJ has followed a plant based diet for over 37+ years! If you haven't heard of her yet, she is the author of Unprocessed: How to Achieve Vibrant Health & Your Ideal Weight and the host of a new television series called "Healthly Living with Chef AJ" on Foody TV which also produces a weekly podcast by the same name. This former Executive Pastry Chef at Sante Restaurant in Los Angeles creates all of her decadent desserts free of sugar, oil and salt. To sweeten her desserts, she only uses whole dates. Chef AJ has a certificate in plant based nutrition from eCornell and is a member of the American College of Lifestyle Medicine. She created the Ultimate Weight Loss Program and Healthy Taste of LA which has helped hundreds of people achieve their optimum health. At home in Los Angeles, she shares her plant based lifestyle with her husband Charles and their rescued dog Sparky.

      +YouDontKnowMe There is absolutely no added fat in the Nutrient Rich Black Bean Soup or the Red Lentil Chili. The nuts can easily be omitted from the quinoa salad.

    Hi Chef AJ, I just heard your interview with Dr. Colin Campbell and loved it. He is my hero and would love to meet him one day and thank him for changing my family's lives! I just started a new blog to inform people about the benefits of eating a whole-plant based diet for optimal health. I will also be sharing homemade Italian recipes with a plant-based twist. What can I use to substitute for cheese!. It's hard to make lasagna without cheese. What is the name if your cookbook? I would love to try your plant-based desserts!     The replacements of bpa plastic are probably as toxic or more toxic than bpa. The oceans are now full of plastic. By soaking beans overnight, I am able to cook beans quickly in less than half an hour without using a pressure cooker. I also soak brown rice overnight. Vinegar is sort of a processed food or refined food altho it is probably healthy. Vitamin b12 is a refined substance that vegans need. I try to get most of my calories from tubers like sweet potato which require less water to grow than grains. Chocolate and beef require the most water to produce. Vegan milks are processed foods that should be avoided. Dry foods like grains I cook or consume with lots of water. Japanese purple sweet potato is found in asian grocery. American has its own type of organic purple sweet potato called stokes (stokesfoods com) that is sold at whole foods.
