The crown jewel of which, despite Artie Bucco's hapless attempts, is the cuisine of Carmela Soprano.     Whenever someone cooks an italian dish we italians get angry. No matter how good or bad you make it you're always wrong. I realized I was getting mad but cant really say why. Doesent matter if you're american or italian, making it the right way or changing it. Whatever you do is wrong.

    You don't need to precook the lasagna pasta lol, the tomato sauce will cook it in the oven. If my nona see me boiling lasagna pasta she would beat me up.

    My aunt does ziti lasagna. Literally just substitute lasagna noodles for ziti.

    As an Italian, I feel very offended by you putting ricotta, mozzarella and basil in a lasagna.
    Absolutely NO! Nada! Nein! Do not ever do that! Do not even remotely think about doing it!
    Lasagna = pasta + ragù+ béchamel + parmigiano on top, forget about all the other shit.

    My family has always called what "the big boy" a dutch oven and what he calls a dutch oven, a casserole dish.
    I am very confused on pots right now.

    Try it leaving it without tin foil a little more, it will have a crunchier crust. Also, if you have good tomatos and you let it cook slower, you won't need to add any tomato paste.

    You haven't tried ricotta until you've had it fresh from Galati cheese in Windsor, ON, Canada. Sounds unbelievable I know, but you won't know until you try. Worth the trip...from a fellow foodie

    I made the Babish version of baked ziti and it was amazing. The only mistake was using ricotta instead of cottage cheese because that's what I had on hand, and I think it was the only weak point - although it may have been because I didn't add any salt into the cheese/egg mixture which made it kind of bland. I will try again with cottage cheese and see if that makes it better, and if not I will just need to add a bit of salt into it before it gets all mixed up and it should be perfect.

    My dad mixes ricotta and small curd whole milk cottage cheese with shredded mozzarella then tops it with grated parmesan for each cheese layer of a lasagna.
    His lasagna is still my favourite to this day.
    Edit: I was angrily corrected about what specific cottage cheese he uses😪
