    I've been a butcher for almost 20 years. It always baffled me what people do with eye round steaks. They sell pretty well. There's no way they're dry aging them.

    You could use that dry aged eye of round as a cold cut . Like a prosciutto or braseola.
    Looking at that aged steak you would have to cook it in a pan with lots of butter and maybe then it would reach a tender state .

      Spade Ace0818 usually the moisture comes back in to an extent the dry age is basically only done because it gives the meat a special taste I think he went way to long with the dry age tho. I’ve seen bigger steaks only be dry aged for max like 30 so idk why he left it for so long. (I’m not a chef so take my comment with a grain of salt just going off the little knowledge I have)

      Depends on the cut of meat. dry-aged steak is usually made from fattier meat. Fat makes meat juicy when barbacued.
      This one however is an "eye round" an incredibly lean and tough cut of meat, made from the back of the leg of animals, and in this case, of cow. This muscle is always under a lot of stress so it is extremely tough.
      In the end, if you cook meat with no fat it is always dry unless you add fat to it, and even then it might still be dry.
